Easy Chicken recipe #2 – Chicken Handi

Yep… I wrote Chicken Handi in the title. Yes! That Chicken Handi that you order from the restaurants. Here I am going to post an easy version of it (inspired from this post, I have changed it here and there to suit whatever was available with me at that point of time)


Ingredients –

Oil 2-3 tsps
Chicken (boneless) 250 grams
Ginger/Garlic Paste 2 tsp
Tomatoes (skinned & chopped) 2-3
Onions (thinly sliced) 1
Plain Flour 1 tsp
Cream 1/4 cup
Milk 1/4 cup
Ginger (julienne) 2 tsp {optional}
Coriander (chopped) 2-3 tbsp {optional}
Salt as required
Dry fenugreek leaves 1 tsp
Ghee 2-3 tsp
Red Chilli Powder 1 tsp
Cumin Powder 1 tsp
Green Chillies (chopped) 1-2
Black Pepper (ground) 1/4 tsp
Garam Masala 1 tsp
Water as required
Ghee 1-2 tsp

Steps to follow to get that yumm! looking chicken!
1. On medium high heat fry onions with oil in saucepan until golden brown then add ginger/garlic paste, mix well for 1 minute.
2. Add cumin powder, red chilli powder, salt, 2-3 tbsp water, tomatoes and then cover with lid for 5 minutes until everything softens.
3 Add chicken mix well on high speed for 2-3 minutes
4. Add fenugreek leaves, green chillies, black pepper, garam masala.
5. Combine Milk and cream (whisk) and add flour. Add this to Chicken in the pan.
6. Add ginger and coriander mixing well.
7. In a β€˜handi’ heat 1-2 tsp ghee and instantly add the chicken mixture. {optional – I did not do this step at all :-/}
8. Garnish with chopped coriander and serve immediately.


As always, if you do not have cream, do not fret! use 1/2 cup of milk with flour…. it is same πŸ™‚

This was done in 30 mins ( I think less) and was super yumm! I served it with boiled white rice, but it will go well with Rotis as well πŸ™‚ Enjoy πŸ™‚

    1. No, I didn’t modify it actually. Here the food Tv shows started the trend of this cup-measurements et all. First I did not understand it but then later I understood that whatever cup I used, I needed to use that till the very end πŸ™‚ It was all trial and error.

  1. I made a chicken like this, but without the cream and many of the spices and without the flour and ghee, fenugreek, etc. I added turmeric instead of cumin and added tomato sauce instead of fresh tomatoes. Must try the chicken with cumin and with the cream and flour, and add the garam masala ( I have some in a bottle but have not used it more than once).
